Authentic Tamil Sambar Recipe — The Soul of South Indian Cooking

What is Tamil Sambar?

You need: 200g toor dal (pigeon pea lentils), 2 tbsp sambar powder, 50g tamarind (soaked in warm water), 2 medium tomatoes, 1 drumstick (moringa), 1 small onion, 1 tsp mustard seeds, curry leaves, dried red chilli, asafoetida (hing), and pure coconut oil. Step-by-Step Method

1. Pressure cook toor dal with turmeric until soft and mushy. 2. Extract tamarind water from soaked tamarind. 3. In a deep pan, heat coconut oil, add mustard seeds and let them splutter. 4. Add dried red chilli, curry leaves and asafoetida. 5. Add onion and tomatoes, sauté until soft. 6. Add tamarind water, sambar powder, salt, and vegetables. 7. Simmer for 15 minutes. 8. Add cooked dal, adjust consistency and taste. 9. Finish with a ghee tadka for depth.

Tips for Authentic Flavour

Use cold-pressed coconut oil for the tadka — refined oil gives a different flavour profile. Fresh curry leaves are essential; dried ones lose most of their aroma. Source your tamarind whole or as a block rather than a paste for the cleanest tamarind flavour. Most importantly, use a high-quality sambar powder from Tamil Nadu — not the generic supermarket blend.
