Pongal 2026 — Traditional Recipes & How to Celebrate the Tamil Harvest Festival in Europe

Pongal is the most important harvest festival in Tamil Nadu — a four-day celebration of gratitude, fresh rice, and sweet jaggery. Here is how to recreate every traditional dish in your European kitchen.


What is Pongal and Why It Matters

Pongal (பொங்கல்) falls in mid-January each year to mark the Tamil harvest season. The name literally means "to boil over" — referring to the moment freshly harvested rice boils over in a clay pot, symbolising abundance. The festival has four days: Bhogi (cleaning and renewal), Thai Pongal (the main cooking day), Maatu Pongal (honouring cattle), and Kaanum Pongal (family gatherings). For the Tamil diaspora in Europe, it is one of the most emotionally significant celebrations of the year.

Ven Pongal (Savoury Rice)

Ingredients: 200g raw rice, 100g split moong dal, 2 tbsp ghee, 1 tsp black pepper (coarsely crushed), 1 tsp cumin, 10 cashew nuts, fresh ginger, curry leaves, and asafoetida. Method: Dry-roast the moong dal until fragrant. Cook rice and dal together with plenty of water until very soft and porridge-like. In a separate pan, heat ghee generously and fry cashews, ginger, pepper, cumin, and curry leaves. Pour the tadka over the cooked rice-dal mixture and mix well. Serve immediately with coconut chutney and sambar. The key is using enough ghee — Ven Pongal should be rich and slightly sticky.

Sakkarai Pongal (Sweet Rice)

Ingredients: 200g raw rice, 100g split moong dal, 250g jaggery (powdered), 2 tbsp ghee, cardamom, cashews, raisins, edible camphor (a pinch). Method: Cook rice and dal to a very soft consistency. Dissolve jaggery in a little warm water and strain. Add the jaggery syrup to the cooked rice and stir well on low heat until it thickens. Finish with a generous ghee tadka with cashews, raisins, and cardamom. Sakkarai Pongal should be sweet, sticky, and fragrant — not dry. Use dark jaggery (palm jaggery) for deeper flavour.

Medu Vada — The Essential Side

No Pongal meal is complete without crispy medu vada. Soak 200g urad dal for 4 hours, grind to a thick, fluffy batter with minimal water. Season with black pepper, cumin, curry leaves, and green chilli. Shape into rings and deep-fry in hot oil until golden. The batter should be thick enough to hold its shape — if it is too loose, the vada will absorb oil. Serve hot with coconut chutney and sambar.
